Happy Halloween.

I had a little bit of fun with dinner last night for our Stich n’B*tch.

Stuffed peppers were inspired by the Unintended Housewife. The stuffing recipe was Joy of Cooking’s basic ground beef and rice.
I loved what Glorious Treats had done with this candy corn mousse, but I wanted it to be a little healthier and to have an Asian twist, so instead of doing cheesecake mousse colored with food coloring, I did a mango pudding (with three drops  of dye added to half of it to make it orange) and topped it with a coconut mousse–I substituted Greek yogurt and skim milk for the 2 cups of cream called for which made it more of a pudding, but much healthier.

Autumn is really the most wonderful time of year. Here in Hong Kong the weather is perfection–sunny days with just a tiny chill in the air. We were joking last night about how you know someone here is a tourist because they’re wearing a skimpy sundress, whereas we’re all revelling in wearing jeans for the first time in 9 months and “bundling up” in scarves. Fact check: it’s been in the low eighties!
